Cheer Sport Blacktip Sharks Cheerleading Cupcakes

A good friend of ours is an awesome coach for the Cheer Sport Blacktip Sharks cheerleading team. As a treat for her girls, she asked us to make some simple cupcakes representing their teal, black, and white colours. Howard use to cheerlead with her on their University's team, so he wanted to create some neat cheerleading decorations for the cupcakes, but we didn't have enough time. We made two dozen chocolate cupcakes and one dozen vanilla cupcakes, frosted with vanilla buttercream in teal and white, then decorated with fondant shark fins!

  6. Beautiful work. I am starting a cupcake business in Germany, but am a fellow Canadian. I was wondering if you could give me a few tips about cutting fondant without a cutter. For example, the Cheer Sport logo. How did you cut that? I have an exacto knife but when I try to cut out custom shapes the fondant is too soft and when I cut the fondant, it sticks and the design I cut gets dragged out of shape. Any suggestions? Thicker fondant? Slightly hardened fondant? Different cutting method?

    Hello and thank you! We made the Cheer Sport logo by hand with an x-acto knife. You're right about fondant being too soft to cut intricate shapes. We do roll out the fondant and let it dry for a bit (15-30 minutes depending on your weather) so that we can cut without it dragging. We haven't tried using really hard or dried fondant (dried disks for a day for example), but reckon that it should work. The only thing is you won't be able to patch up any mistakes!
